Pappardelle with sausage


Ingredients:


5oo grams pappardelle
800 grams of minced sausage
1 bottle of sauce
1 onion, shallot
1 clove garlic
1 packet of saffron
pepper and chilli
1 glass of white wine or rosé

Procedure:
In a saucepan, fry the garlic and shallot in small pieces, just golden, add the chopped sausage and cook over low heat for about 30 min. Apart Dissolve saffron in a cup with a little wine, and add to sauce. Add the rest of the wine and let it evaporate. Cook for at least another 15 min. Add the bottle of sauce, pepper and hot pepper and cover. Cook until the sauce is restricted (at least 30 min.) Aside cook pasta in salted water, drain and pour into a skillet with the sauce, handle, and sprinkle with a handful of parmesan cheese.
