anelletti al forno(english)


Ingredients for 8 people:
-500 g anelletti
-400g of minced beef
-400g of minced pork
-1 carrot
-1 white onion
-1 stalk sedano
-4oo gr of peas
-1 clove
-2 lt is tomato sauce
-400 grams of mozzarella
-250 gr of grated parmesan
-2OO g butter
-4oo grams of fresh cheese (asiago, Emmental cheese or fresh)
-1 glass of white wine
-1 teaspoon sugar salt and pepper q.b.
Procedure for the sauce:
Whisk the onion and carrot and celery, all in a fry pan, add peas, cook for about 10 minutes, add the minced meat mixture, add salt and pepper and add the cloves, cook over low heat for at least 30 minutes, stirring occasionally. Add 1 cup of white wine and let it evaporate. Add 2 liters of tomato sauce and cook for 30 min. Meanwhile, diced mozzarella, butter, cheese. In a large pot cook in salted water for half the anelletti time than expected. Drain and replace the pot drain. Add to anelletti butter, mozzarella cheese and Parmesan cheese, handle, and add 3 / 4 of meat sauce and handled well.
