Stuffed cardoons

Ingredients for 4 people:
-4 cardoons
-500 g breadcrumbs
-1 bag of raisins and pine nuts
-200 gr grated pecorino cheese
-100 grams of diced ham
-200 grams of fresh cheese
-oil, salt pepper
-1 shallot onion
-1 anchovy
Peel and wash the cardoons, boiled in salted water and 1 lemon cut in half, so that remain green. In a pan fry the onion, anchovy melt, add the raisins and pine nuts, diced ham, breadcrumbs, fresh diced the cheese, salt, pepper and parsley and cook for 5 minutes. Drain carefully the cardoons so that will not open, stuffed with the mixture and close with a cotton thread. Go in the oil and breadcrumbs and fry theme.Serve hot.
