" Cuddureddi "



Ingredients:

1 / 2 lt of water
250 gr of wheat flour
zest of 1 lemon
1 tablespoon olive oil
1 heaped tablespoon of sugar
sugar and cinnamon to sprinkle
oil for frying

Procedure:

put in a pan the water, lemon rind, sugar and oil and bring almost to boil when they begin to make the bubbles, pour the flour slowly, stirring constantly for about 2 minutes. (attention because the paste will harden quickly, then stir vigorously). Pour the mixture into a bowl and let cool long enough to be able to handle, then take a bit of compost, roll it up lengthwise, and flatten slightly with your finger in the middle, then cut into strips about 7 cm and formed rings (cuddureddi ) that you are going to close in the extreme.




Heat plenty of oil for frying, should cover cuddureddi and when it is hot (do the test with the handle of a wooden spoon, dip it in oil and if form bubbles is ready), dip the cuddureddi and fry for 5 minutes . Drain and place it in paper towels. Then pass them in sugar mixed with cinnamon and serve hot.

Panelle

Ingredients:

500 g of chickpea flour
1.5 lt of water
1 sprig of parsley
1 tablespoon fennel seeds
salt and pepper
oil for frying


Procedure:
Dissolve chick pea flour in cold water, taking care to avoid lumps, add salt, pepper, chopped parsley and fennel seeds.
Cook over low heat, stirring constantly with a wooden spoon (you must be careful that it does not stick to the bottom of the pan), until you get a very compact cream that detached from the sides of the pan.
Pour the cream into a flat surface (I poured it into the plates), and with a spatula, level and form of layers of 0.5 cm. Do this as quickly as possible, otherwise the cream will harden .Cut panelle in triangle, and fry in hot oil. serve hot.
