4 artichokes
3 potatoes
100 grams of peas
3 mushrooms
1 sprig of parsley
salt and pepper q.b.
1 packet of saffron


First clean the artichokes, removing the outer leaves, leaving only the heart, remove the tips and beard inside, cut into wedges and place them in water and lemon. Cut the onion into thin rounds and place into a frying pan with a little oil, add the drained artichokes, mushrooms, cut into quarters, potato in pieces and peas, add 1 cup water, salt and pepper and simmer, add the saffron dissolved in a cup of warm water and parsley chopped. Continue cooking for about 20 minutes
