Cassatelle with ricotta


Ingredients for the pastry:
300 grams of flour 00
150 g margarine
1 tablespoon cinnamon
1 tablespoon alchermes
100 gr sugar
1 egg yolk
1 pinch of salt
1 packet vanillin
1 teaspoon of orange powder
icing sugar
oil for frying

For the stuffing:
500 g fresh ricotta
100 gr sugar
30 grams of chocolate chips

procedure for the pastry:
Pour the flour into a bowl, join the margarine and mix, add the egg, archermes, cinnamon, sugar, pinch of salt and the vanilla and powder orange. Mix all, form a loaf and wrap in plastic wrap put it in the refrigerator for at least 1 hour

Meanwhile prepare the filling by mixing ricotta and sugar , then add the chocolate chips and mix with a spatula.

Roll out the dough with a rolling pin and form a layer of 1 / 2 cm, make round shapes and put the ricotta in the center, close forming crescents and crush the edges. Meanwhile, heat oil in a frying pan and when oil is hot dip the cassatelle for about 1 minute. Take them with a skimmer and lay them on absorbent paper. Serve warm sprinkled with icing sugar.
