Spaghetti with zucchini


5oo grams of spaghetti
4 green zucchini
1 sprig of parsley
1 clove garlic
1 onion, shallot
extra-virgin
grated Parmesan
1 packet of saffron
salt, pepper and chilli

Procedure:
In a large fry pan, put some oil, garlic (whole) and shallot.Add the zucchini cubes, salt, pepper and oil, cook over low heat for at least 10 min.
Melt the saffron in a cup with a little hot water and pour it into the zucchini, add a little water, which will be used to cook the spaghetti(I usually add 1 glass for 80 grams of pasta), when it is piping hot put the spaghetti and cover, stirring occasionally. When cooked, sprinkle with a handful of parmesan, pepper and parsley.
